Ingredients

Makes 4 servings

  • peeled and deveined shrimp
  • garlic powder
  • Old Bay seasoning
  • salt (to taste)
  • black pepper (to taste)
  • garlic butter
  • olive oil
  • fettuccine
  • heavy cream
  • unsalted butter (1 stick)
  • reserved pasta water
  • garlic cloves (minced)
  • freshly grated Parmesan cheese
  • cream cheese
  • fresh parsley (chopped, plus more for garnish)
  • dried oregano
  • Italian seasoning
  • red chili flakes
  • MSG (optional)

How to make it

  1. Combine the shrimp with olive oil and seasonings.

In a large bowl, combine the shrimp with olive oil, garlic powder, Old Bay seasoning, salt, and pepper. Toss until evenly coated.

  2. Heat the skillet and add garlic butter and olive oil.

Heat a large skillet over medium-high heat. Add the garlic butter and olive oil.

  3. Cook the shrimp until pink.

Cook the shrimp for 1–2 minutes per side until pink and just cooked through. Work in batches if needed to avoid overcrowding the pan.

  4. Stir in the chopped parsley and set aside the shrimp.

Stir in the chopped parsley, then remove the shrimp from the skillet and set aside.

  5. Boil water and cook the fettuccine.

Bring a large pot of generously salted water to a rolling boil. Cook the fettuccine according to the package instructions until al dente.

  6. Reserve pasta water and drain the fettuccine.

Reserve ¼ cup of the pasta water, then drain.

  7. Melt butter in the skillet.

In the same skillet used for the shrimp, melt the butter over medium heat.

  8. Sauté the minced garlic.

Add the minced garlic and sauté for about 30 seconds, until fragrant.

  9. Add seasonings to the skillet.

Stir in the red chili flakes, garlic powder, oregano, Italian seasoning, salt, pepper, and MSG (if using). Cook for another 30 seconds until fragrant.

  10. Pour in the heavy cream and add cream cheese.

Pour in the heavy cream and add the cream cheese. Stir until smooth, then let the sauce gently simmer for 3–5 minutes until it begins to thicken.

  11. Whisk in the Parmesan cheese.

Reduce the heat to low and gradually whisk in the Parmesan cheese until melted and creamy.

  12. Stir in the reserved pasta water.

Stir in the reserved pasta water until the sauce reaches your desired consistency.

  13. Toss the fettuccine in the sauce.

Add the cooked fettuccine and toss until evenly coated in the sauce.

  14. Top with cooked shrimp and garnish.

Top with the cooked shrimp and garnish with additional Parmesan, fresh cracked black pepper, chopped parsley, and extra chili flakes, if desired.

  15. Serve the dish hot.

    Serve immediately while hot.
