How to make it
Preheat the oven to 450°F (232°C).
Juice the lemon and set aside.
Cut the potatoes into small pieces and place them in a large bowl.
Add the lemon juice, thyme, salt, and pepper to the potatoes.
Place the whole chicken on a roasting pan.
Rub the chicken with butter or olive oil and season with salt and pepper.
Arrange the potatoes around the chicken in the roasting pan.

Let the chicken rest for 10 minutes before carving.
